1 Cup Sugar plus additional for forming the cookies
1/4 Cup Molasses
1 Lg. Egg
2 Cups Flour
2 tsp. Baking Soda
1 tsp. Cinnamon
1/2 tsp. Salt
1/2 tsp. Ground Cloves
1/2 tsp. Ground Ginger
In large bowl whisk together the lard, 1 cup of the sugar, the molasses, and the egg. Into a bowl sift together the flour, the baking soda, the cinnamon, the salt, the cloves, and the ginger and stir the flour mixture into the molasses mixture, stirring until the mixture forms a dough. Chill the dough, covered, for at least 2 hours or overnight. Roll level Tbl. of the dough into balls, roll the balls in the additional sugar, coating them completely, and arrange them 3 inches apart on lightly greased baking sheets. Bake the cookies on batches in the middle of a preheated 375 degrees F. oven for 8 to 12 minutes, or until the tops are cracked and the cookies are just set, transfer them with a spatula to racks, and let them cool. Makes about 35 cookies.
